The Molinillo ~ When Cacao Becomes a Dance

This article is based on scientific research conducted by researchers at the Institute of Biotechnology of the National Autonomous University of Mexico (UNAM), who studied how the molinillo works using high-speed cameras. Their research sheds fascinating light on this traditional wooden tool, revealing how a gesture passed down through generations embodies a remarkable efficiency that modern science is only now beginning to fully understand.


In many homes across Mexico and Central America, preparing cacao is far more than following a recipe. It is a gesture passed down from generation to generation, a moment of presence, and a living tradition that connects the hands, the heart, and the drink itself.


At the heart of this tradition is the molinillo, an elegant wooden whisk rolled between the palms of the hands to stir the cacao and create a delicate layer of foam on its surface.


Yet the molinillo we know today is probably not as ancient as one might imagine.


Long before its appearance, the peoples of Mesoamerica were already preparing cacao-based drinks. To create the highly prized foam, they sometimes poured the beverage from one vessel to another from a certain height. Others stirred the liquid using simple wooden sticks or carved branches. It was only later that the molinillo appeared in the form we know today, most likely emerging from the meeting of Indigenous traditions and woodworking techniques introduced by the Spanish.

Beyond the diversity of its forms, the molinillo remains closely associated above all with one of the most characteristic elements of traditional cacao beverages: the foam.


But why was this foam so important?


Ancient depictions found on ceramics and codices show that foam held a special place in many Mesoamerican cultures. Among some Indigenous peoples of southern Mexico, such as the Zapotecs, it is still regarded today as the very soul of the drink.


Foam was therefore never just a matter of appearance.


It was an essential part of the cacao experience itself.


For a long time, the preparation of this foam remained an empirical form of knowledge. The techniques were passed down through observation and experience. Grandmothers knew how to hold the molinillo, how deep to place it, and the rhythm at which it should be rolled. They knew the gesture, without ever needing to explain the physics behind it.


And then science turned its attention to this ancestral knowledge.


Researchers from the Institute of Biotechnology at the National Autonomous University of Mexico (UNAM) studied how the molinillo works using high-speed cameras capable of capturing thousands of images per second. Their research revealed that the traditional techniques passed down through generations are remarkably effective.


They discovered that the molinillo does not perform the same function throughout the drink.


Near the bottom of the vessel, it helps lift the cacao that has settled. In the middle of the drink, it encourages the water and cacao butter to blend together. As it approaches the surface, its grooves and openings capture air, allowing the foam to form.


In other words, the molinillo does much more than create foam.


It also brings the cacao back to life through movement.


The researchers even found that this ancestral tool performs comparably to certain modern devices used in the food industry to produce foams. When rolled rapidly between the palms of the hands, it can reach speeds of nearly 11 km/h (7 mph).


Yet what moves us most may not be its performance.


The researchers observed that every person develops their own way of using a molinillo. Each person finds their own rhythm, their own movement, their own way of making the wood dance within the drink. Like handwriting or a signature, every gesture becomes unique.


Thus, when we prepare cacao with a molinillo today, we may be repeating the same movements as thousands of people before us. Yet, in our hands, these gestures become unique, carried by an expression and an energy of the heart that are our own.
